    AIP frosting for german chocolate cupcakes

    If you're needing a relatively simple AIP frosting recipe for german "chocolate" cupcakes or cake, this is it! If you're wanting a super easy way to make cupcakes or cake, Eat G.A.N.G.S.T.E.R. baking mixes are amazing! I tried out the Dark Choconot Fudge cake mix for this recipe (courtesy of Eat G.A.N.G.S.T.E.R) and there's a video! Check it out below.

    Ingredients in the AIP Frosting

    • Dates- I use Medjool dates but other types would probably work as well. Try to choose unsweetened and unsulfered dates. Organic is great if you can find them. These should be very soft. If they're not, soak them in hot water for about 10-15 minutes, then remove the pits. 
    • Coconut Milk -Be sure to use one without guar gum. 
    • Maple Syrup
    • Fine Sea Salt
    • Shredded Coconut- Make sure it is unsweetened and the shreds are pretty thin. 

    How to make this AIP Frosting

    1. Combine the dates, coconut milk, maple syrup, and sea salt in a small food processor. Blend until smooth.
    2. Fold in the coconut shreds. Spread the frosting on each cupcake and serve.

    The AIP Cupcakes

    Eat G.A.N.G.S.T.E.R. sent me some baking mixes to try out to include the Dark Choconut Fudge Cupcakes. These cupcakes just require coconut oil, water, maple syrup, and apple cider vinegar. The texture is super fluffy and moist- just like a regular cupcake. The taste is pretty darn impressive too- I feel like baked goods that contain carob can be hit or miss. These are definitely a win! Plus, the frosting makes them even more irresistible.

    About Eat G.A.N.G.S.T.E.R. Baking Mixes

    Eat G.A.N.G.S.T.E.R. sells several AIP compliant baking mixes and they're very easy to use. You can find them on Amazon, ShopAIP, and the Eat G.A.N.G.S.T.E.R. website.

    G.A.N.G.S.T.E.R is an acronym for:

    Sugar Cookie Mix-They sent me this mix to try as well the cookies taste just like sugar cookies! It's amazing. They're super easy to make- It took me about 5 minutes to mix them up and put them in the oven. You can also make cut-out cookies with this mix! I'll have to try that next time.

    Ingredients
      

    • 8 soft medjool dates, pitted
    • 1/4 cup full fat coconut milk
    • 1/4 cup maple syrup
    • 1/8 tsp fine sea salt
    • 1/2 cup unsweetened shredded coconut

    Instructions
     

    • Combine the dates, coconut milk, maple syrup, and sea salt in a small food processor. Blend until smooth.
    • Fold in the coconut shreds. Spread the frosting on each cupcake and serve.

    Notes

    This frosting is enough for about 12 cupcakes. 
    I used the Eat G.A.N.G.S.T.E.R. Dark Choconot Fudge cake mix for the cupcakes. They are amazing.
    If your dates are dried out at all, soak them in hot water for 10-15 minutes first. This will yield a smoother frosting.
