AIP breakfast bars are one of my favorite things to make, mainly because they're portable and require no baking. I tried out Nuco Cinnamon Coconut Crunch Cereal, courtesy of ShopAIP and it's fantastic eaten with a little coconut milk or just eaten by itself as a snack. However, I feel the need to turn everything into a snack bar, so here we are!

Ingredients in These AIP Breakfast Bars

  • Nuco Cinnamon Coconut Crunch Cereal
  • Gelatin Powder
  • Fine Sea Salt
  • Ground Cinnamon
  • Coconut Oil - You'll need to melt this before measuring. If you must substitute something, use a saturated oil (something that's firm at room temp. This is part of what holds the bars together once they cool.
  • Water
  • Honey-Maple syrup would be fine too.
  • Raisins

How to Make These AIP Breakfast Bars

  1. Cut a piece of parchment paper to fit a small loaf pan (roughly 9 x 5 inches). If you don't have parchment paper, grease the pan with coconut oil.
  2. Combine the cereal, gelatin powder, sea salt, and cinnamon in a food processor. Blend into fine particles.
  3. Pour the mixture into a medium bowl. Add the oil, water, and honey. Stir the ingredients together with a spoon or fork until well combined.
  4. Fold in the raisins.
  5. Pour the mixture into the loaf pan (it will be crumbly- this is normal). Press the mixture down firmly into the pan forming an even layer using your hands. This can be a little easier using gloves or parchment paper. Or you can just use the back of a spatula.
  6. Allow it to sit for at least an hour. Cut into 8 squares.

NOTES

  • If you don't have a food processor, a blender may work.
  • When you cut the bars, the edges will crumble a little bit but the bars hold together well otherwise.
  • Keeping them in the fridge gives them a firmer texture- they're very good this way but it's just a personal preference.
