Yes. Tigernuts are little tubers or root vegetables that originally came from Northern Africa and the Mediterranean. As such, they are not a nut, so they are completely AIP compliant.
Benefits of Tigernuts
These little root vegetables are rich in vitamins and minerals like calcium, zinc, phosphorus, potassium, magnesium, vitamin E, and folic acid. Similarly, they are a great source of resistant starch which acts as fermentable fiber. This is important because resistant starches help to feed good gut bacteria. What is Tigernut flour?
