    Air Fryer Jicama Fries (Paleo, AIP, Whole30)

    If you're needing a good, indulgent AIP snack or party food, this is it! Air fryer jicama fries are such an amazing treat and there are so many ways to eat them. If you haven't tried turning jicama into fries yet, I recommend it!

    These yummy shoestring jicama fries are coated with olive oil and a simple seasoning mixture. They’re then topped with bacon, avocados, AIP ranch dressing, green onions, and black olives. Although, you can top them with whatever you want or eat them plain!

    What is Jicama?

    Jicama is also called a Mexican yam bean, Mexican turnip, or Mexican potato among other things. Jicama is a starchy root vegetable vegetable similar to a potato. It is high in dietary fiber and carbohydrates. In particular, it's high in inulin, a prebiotic which is great for feeding healthy gut bacteria.

    What Does Jicama Taste Like?

    Jicama eaten raw tastes like a cross between an apple and potato. It's crunchy and juicy with a hint of sweetness. Eaten cooked, it tastes closer to a potato or fries and loses most of the sweetness.

    Ingredients for Air Fryer Jicama Fries:

    • Jicama- I used one whole jicama root, peeled and chopped into thin matchsticks (1/4 in thick & 3 in long). I may have even gone a little thinner than 1/4 inch. 
    • Olive Oil- Avocado oil is fine too.
    • Garlic Powder
    • Sea salt- I generally go with pink Himalayan but any sea salt is fine. 
    • Turmeric
    • Onion Powder

    Toppings

    • Green Onions
    • Diced Avocado
    • AIP Ranch Dressing
    • Black Olives

    How to Make Jicama Fries in an Air Fryer

    1. Boil the fries for about 15 minutes or until no longer crunchy (this part is super important!)
    2. Drain the water from the fries.
    3. Place the fryer basket in the air fryer and preheat it to 400 degrees and set the time to 12 minutes (You may want to stop it a couple minutes early or go a little longer depending on desired crispiness). 
    4. In a small dish, combine the garlic powder, onion powder, salt, and turmeric.
    5. *You will likely need to cook the fries in two batches.
    6. In a medium bowl, add half of the fries plus 1 tbsp of oil and 1/2 the seasoning mixture. Toss until the fries are well coated.
    7. Add the fries to the air fryer and distribute evenly. Cook for 10-12 minutes. Check occasionally and stir to prevent burning.
    8. Repeat the process with the second batch.
    9. Add desired toppings and serve!

    Notes:

    • Be sure to cut the fries nice and thin (think matchsticks). This will ensure that they cook quickly and get nice and crunchy in the air fryer. 
    • Make sure you boil them until they are soft. This is crucial for getting them to cook correctly in the air fryer. I got impatient the first time I tried this recipe and didn't let them boil long enough (they were still a little crunchy). Big Mistake! They ended up just getting burnt in the air fryer and they still weren't fully cooked in the center.
