These Paleo Brownie Bites will nip any sweet craving in the bud. While nice clean Paleo eating is great, sometimes you just need a good chocolate brownie. Luckily these are relatively guilt free being made with only whole food ingredients.
These are my daughter's favorite snack lately. She ate half the batch herself the first time I made them and she's always wanting her friends to try them. I love these because they're super quick and easy, with only 4 ingredients and no baking needed.
While these are nice and sweet and dessert-like, they have a good balanced flavor and work great as an on-the-go snack too. I just put 3-4 of these little bites in a bag and take it with me or send with the kids to school or sports practices. For other on-the-go paleo snack ideas, check out this post.
Pecans- these can be whole or chopped (doesn't matter as they'll go right in the food processor)
Dates- Remove the pits if they're not already pitted. Sometimes I buy dates with the pits already removed to save a little time. The stickiness of the dates makes them such as useful ingredients in snack bars and bites as they hold everything together really nicely.
Here's how to make these babies: Just start by adding all your ingredients to a food processor and blending them into a fine crumbly mixture.
Next, you'll want to pour the mixture onto a piece of parchment paper or baking sheet.The mixture is super crumbly at first but don't worry- it will come together.
Just press firmly with your hands to form a ball. Now just press the ball down on the parchment paper forming a 7x7 inch square. I've started to make my cuts here.

Equipment
- Spatula
Ingredients
- 1/2 cup Pecans
- 6 Dates
- 1/2 cup Shredded Coconut unsweetened
- 1 tbsp Cacao Powder
Instructions
- Combine ingredients in food processor and mix well. Mixture will be crumbly- this is normal.
- Pour mixture onto parchment paper or baking sheet.
- Press the mixture together with your hands forming a ball.
- Press onto parchment paper forming a square about about 7x7 inches and 1/2-1 inch thick.
- Cut into 16 squares and enjoy!
